Put in a bowl, the "Bolo Rei", eggs, water, liquors and dry yeast. Knead for 15-30 minutes until an elastic dough is obtained.
Add the Candied Fruit Chunks and the Dried Fruits Mix and knead until incorporating. Leave it to rise for one hour.
Place the Pastry Cream, sugar and water in a bowl. Beat until you obtain a firm cream.
On a floured surface, roll out the dough into a rectangle.
Spread the dough with the Pastry Cream and sprinkle with cinnamon powder to taste. Roll up tightly.
Place the roll on an oven tray, lined with baking paper.
Cut the roll into thick slices and open the slices to both sides alternately so that the filling is visible.
Cover with a clean cloth and let it rise for 1 hour.
Brush with beaten egg. Bake in a preheated oven at 180ÂșC for 40 minutes.
Leave to cool and sprinkle with Snow Sugar.
