Preparation:
- Preheat the oven to 200ºC.
- With a whisk, mix the Carrot Cake Roll with the citrus zest, water and eggs. Leave to rest for 30 minutes.
- Coarsely chop the Dried Fruits Mix.
- Grease an English cake mold with Release Spray and pour in the mixture. Cover with the chopped dried fruit and bake in the oven for 30 minutes.
- Leave to cool completely before unmolding.
- Decorate with Snow Sugar.
