With a whisk, mix the Carrot Cake Roll with the citrus zest, water and eggs. Leave to rest for 30 minutes.
Coarsely chop the Dried Fruits Mix.
Grease an English cake mold with Release Spray and pour in the mixture. Cover with the chopped dried fruit and bake in the oven for 30 minutes.
Leave to cool completely before unmolding.
Decorate with Snow Sugar.
